Bourbon

Bourbon has been made in the U.S. since the 18th century and though it can be made anywhere in the U.S. that allows spirit production, it’s widely associated with its Kentucky home, Bourbon County. It’s a barrel-aged spirit made of at least a 51% corn mash bill with the remainder either wheat and/or rye and malted barley (if you see “wheated”on the label, it’s made with wheat, not rye). It’s aged in new, charred oak barrels, generally for at least four years. Though there aren’t any requirements on length of age (other than some), this aging in oak is pretty important as it gives the clear spirit its color and flavor.

If the Bourbon is labeled “straight,” it has been aged for at least two years and contains no added coloring, flavors or other spirits, but if it’s aged for less than four years, the age must be on the label. If it’s labeled more than four years (for example, 8 years), all of the Bourbon in the blend must have been aged for at least the stated age. After Bourbon is aged, it is bottled at no less than 80 proof (if it’s less, it’s called “diluted Bourbon”). Many are higher than 80 proof which is sometimes labeled as barrel proof and less diluted, if diluted at all. If it’s labeled blended, it may contain added coloring and flavoring but a minimum of 51% “straight” Bourbon.
