To make this wine, Cabernet Sauvignon and a bit of Malbec is harvested from a vineyard of red volcanic soil at an elevaDon over 2,000 E. above sea level. The grapes are crushed and fermented in stainless steel and then undergo approximately ten months oak aging before bottling. This is a wine to try side-by-side grilled lamb chops with a cilantro and mint sauce, or pizza with arugula, eggplant and mozzarella.
